羅勒青醬真的是大愛的一個醬,超級喜歡羅勒的味道,可以搭配做青醬意麪,可以做雞肉/魚蝦等白肉的配醬
用料
羅勒葉basil | 80g |
帕瑪森奶酪(擦碎)Parmesan | 50g |
橄欖油 olive oil | 120ml |
大蒜garlic | 3 瓣gloves |
松子pine nuts (pre-cooked) | 50g |
檸檬汁juice | 半個檸檬量of half lemon |
鹽 salt | 適量 pinch |
羅勒青醬(Pesto)的做法
洗淨並晾乾羅勒,保留葉子,去掉莖。
提前烤熟或小火烘熟松子
Wash the basil , remove and dry the leaves
pre-cook pine nuts with oven or gas.食物處理器中放入羅勒葉、蒜、帕瑪森奶酪、松子、檸檬汁,鹽,一半的橄欖油。
啟動食物處理器打勻所有食材,然後剩下的一半橄欖油,慢慢從上方放料口倒入,使其完成乳化,停止機器盛出。
Put the basil leaves , garlic, Parmesan (grated), pine nuts , lemon juice, salt,half of olive oil into the big bowl, mix for 1 minute use the food processor to obtain a smooth paste, within the machines running, add the other half of olive oil through the opening until the smooth paste is formed.

保存:無水無油的瓶子保存,表面倒入一層橄欖油封存,防止氧化。放入冰箱冷藏,一週內食用完最佳。Put in a clean bottle and sealed with olive oil on the surface. Keep it in fridge and use it in one week if possible.
松子也可以用其他堅果替代,口味會略有不同
Replace pine nuts with other nuts is an option , but the flavor will be slightly different.
帕瑪森不建議替換成別的。
Better not replace Parmesan with other cheese.
如果醬比較幹,可以加入幾勺煮意麪的水調節濃稠度。
