用料  

*cookie* x10 5cm40g butter30g sugar40g cake flour Top
*Choux* x10 5cm 50g milk50gwater1g salt40g butter60g sifted cake flour2 eggs Puff
*Chestnut Cream*200g Chestnut paste50g butter100g fresh cream*Chantilly cream*300g fresh cream25g sugar Filling

栗子泥酥皮泡芙的做法  

  1. Top: mix all ingredients, 3mm thick, freezer to harden

  2. Boil milk water salt butter, add flour and cook to thin film. Mix egg and slowly add to mixture bit by bit. Pipe to 5cm circle
