If you like slow cooked meat, surely, you will like this beef stew.
One of the most popular Chinese dish.

用料  

Beef brisket 1kg
郫縣紅油豆瓣醬 Broad bean sauce
Ginger 1 piece
Garlic 1
Mint 1 bunch
Carrots
Potato
Shaoxing wine
Soy sauce
Sugar
八角桂皮花椒(滷料包)Marinate herbs

  1. Prepare all the ingredient

  2. Dice the beef in to around 3*3~4*4cm.
    (If it's too big, the flavour of the sauce can't totally soak into the meat. However, if too small, the flavour of the original meat get lost)

  3. Soak the meat into cold water for 30mins to remove blood. (Beef blood will add tranig)

    Wash twice after until the water looks clean.

  4. Marinate the beef with soy sauce and Shaoxing cooking wine for at least 30mins.
    (and a little bit ginger and garlic)

  5. Boil the beef with 100ml Shaoxing cooking wine,some water and half of the ginger until it's boiled.
    *No need to add too much water, just cover the beef would be enough.
    *Put beef into cold water, not hot water, as the beef will immediately shrink in hot water and lose flavour.

  6. Use a spoon to remove the blood foam on top of the soup to make the it tast clean.

  7. Take beef out of the soup
    *Leave the soup, don't through it
