【分享給擁有同樣高中記憶的朋友】最近經常能看到高考和高中相關的新聞,回想起來,我的高中記憶裏,雞腿土豆泥可以算是最重要的兩種食物了,不算頂級美味,但令人念念不忘,這個菜譜改自教材On Cooking A Textbook of Culinary Fundamentals, 5th Edition的431頁的菜譜,算是對高中美食的一種另類回味。

In retrospect, drumsticks and mashed potatoes are two of the most important kinds of food in my high school. They are not the top delicacy, but memorable. This recipe is changed from the textbook on cooking a textbook of culinary fundamentals, 431 page recipe of 5th Edition. It's an alternative aftertaste of my high school food

用料  

雞腿drumsticks 2個
雞翅chicken wing 1只
白胡椒white pepper 適量TT
鹽salt 適量TT
黃油1 butter1 5g
雞湯濃湯chicken stock 480ml
土豆potato 1個
牛奶milk 16g
黃油2 butter2 8g

  1. 用鹽和白胡椒給雞翅和雞腿調味
    Season the chicken wings and drumsticks with salt and pepper .

  2. 在雞腿和雞翅表面均勻地塗上一層黃油,放在烤盤上,下墊一層錫紙
    Spread a layer of butter evenly  on the surface of the chicken wings and legs, put a layer of tin papaer on the baking pan and place the chicken wings and legs on it

  3. 帶烤盤放置到烤箱中,以230℃的温度烤制20分鐘,翻面,再烤制20分鐘
    Put the pan in the oven, bake at 230℃ for 20 minutes, turn over and bake for another 20 minutes.

  4. 取一塊老母雞味濃湯塊,燒水煮開(不嫌麻煩的朋友可以自制高湯)
    Take a piece of chicken soup and boil it with boiling water

  5. 將烤制好的雞翅和雞腿取出,放到雞湯中小火煮5分鐘
    Take out the roasted chicken legs and wings, put them into the chicken soup and cook for 5 minutes

  6. 土豆洗淨削皮切塊,放到鍋裏至變軟,大概15分鐘
    wash the potato,peel it and cut it into pieces. Steam them in a pot for about 15 minutes until they become soft.

  7. 用打蛋器將土豆打成泥
    Mash the potatoes with an eggbeater

  8. 加入牛奶、黃油2、少量鹽和少量白胡椒,打發至均勻,表面光滑,盛盤
    Add milk, butter2, a small amount of salt and white pepper, continue to whisk until smooth and even. Then dish.
