Swedish Meatballs 瑞典肉丸的做法步驟圖

用料  

Ground Beef 牛肉碎 ¾ lb
Ground Pork 豬肉碎 ¾ lb
Milk 牛奶 ¼ cup
Breadcrumbs 麪包糠 ¼ cup
Flour 麪粉 ¼ cup
Onion (small dice) 洋葱切細丁 ½ cup
Egg yolks 蛋黃 2
Black pepper 黑椒粉 ½ tsp
Salt 鹽 1 tsp
Ground nutmeg 肉豆蔻粉 ¼ tsp
Ground allspice 多香果粉 ¼ tsp
Whipping cream 淡奶油 ¼ cup
Beef stock 牛肉高湯 3 cup
Fresh dill (chopped) 新鮮蒔蘿 Garnish

Swedish Meatballs 瑞典肉丸的做法  

  1. Cook the onion to a golden brown in butter and set aside to cool. Soak the breadcrubs in milk until soft and the milk is all absorbed. 洋葱入鍋在黃油中煸至金黃一旁放涼。將麪包糠浸泡在牛奶中充分吸收牛奶。

  2. Mix together:the beef, pork, onion, breadcrubs, egg yolks, salt, pepper, nutmeg and all spice. Roll the mix into medium-size meatballs, about 1 ounce each.  將牛肉碎,豬肉碎,炒好的洋葱,麪包糖,蛋黃,鹽,黑椒粉,肉豆蔻粉和多香果粉放在一起攪拌出筋,用1盎司的勺挖出搓成肉丸。

  3. Heat butter in a large pa and sear the meatballs until golden brown on all sides, about 7-10 minutes. Put on a sheet pan and finish cooking in the oven at 375 F if necessary. 在鍋中放入黃油加熱後放入肉丸兩面煎至金黃,約7-10分鐘。如裏面還不熟, 可放在烤盤中入烤箱375華氏度烤至全熟。

  4. Using the same pan, set heat to low and whisk in the flour, making a roux with the meat fat. Cook the flour for a few minutes. Slowly whisk in the stock and wait for the sauce to thicken. Add the cream and cook the sauce to desired consistency. 用煎肉丸的鍋子,重新加熱後倒入麪粉和鍋中的動物油脂做麪糊。攪拌幾分鐘後倒入牛肉高湯燒開後關小火直到變稠。加入淡奶油煮至想要的稠度。

  5. Add the meatballs back in the suce and allow them to coat in the sauce. 將肉丸重新放入鍋中表面裹上醬汁。

  6. Serve garnished with fresh dill. 放上蒔蘿裝飾裝盤。
