Perfect Steak的做法步驟圖

用料  

Steak (sirloin, fillet, rib-eye, rump)
Olive oil & sea salt & fresh ground black pepper
2 cloves garlic, lightly crush
Thyme or rosemary
knob of butter

Perfect Steak的做法  

  1. Steak : room temperature—1 hour
    Season : olive oil & salt & pepper

  2. heat a frying pan: High heat
    Little olive oil: just start to smoke
    Steak : sear all sides
    Garlic & herb : rubbing on steak
    Butter: foam & basting
    turn the heat down-cook to your like
    rest : 5min

  3. Diane Sauce
    same pan : oil & butter
    shallots: softened.
    (mushrooms)
    Add 1 crushed garlic

    Add 1-2tbsp Worcestershire sauce &
    1 tsp Dijon mustard  : stir well.
    Pour in brandy or whisky: burnt off

    3 Add 1/2 cup cream:
    hight heat --sauce thickens
    season
    Add  chopped parsley or tarragon

  4. bordelaise: sauce pan
    oil & butter:
    4 diced shallots:
    thyme &bay leave
    300ml red wine ( shiraz)
           : burn & reduced
    200ml beef stock:reduced
    pour in beef juice.                                                                   
    Sieve season
    whisk in 20g butter

    *1tbsp parsley
