跟原方有點改動的是,我做了巧克力圍邊,沒有做鏡面。
椰子餅胚很香,跟戚風蛋糕的口感不一樣,但同樣好吃。

椰子餅底草莓芝士蛋糕,方形七寸的做法
1. Coconut Dacquoise - 20cm*20cm
45g coconut powder
25g cake flour(3Tbsp)
50g sugar powder (1/3 cup 1Tbsp)
55g almond powder (1/4 cup 1Tbsp)
155 g egg whites (4 1/2)
65 g (1/2 cup)sugar -我減了1/3糖
3ml vanilla extract
sugar powder 在麪糊拌好後倒在烤盤裏,然後撒上糖粉一起烤。
為了好看,我將餅胚分成兩個顏色一層是原色,一層加了點食用色素拌成了粉紅色。
2. Basic Vanilla cheesecake & Strawberry cheesecake 7 寸:
250g cream cheese(1 cup 1Tbsp)
50g (1/4 cup)sugar
65g unsweetened yogurt(4Tbsp)
5g lemon juice (1 tsp
3ml vanilla extract
7g powdered gelatin 1 Tbtsp
35g water 2 Tbsp +1 tsp
230g heavy cream (50%whipped)
60g strawberry puree 1/4 cup
3. Sweet Strawberry Jelly
100g strawberry puree
25g sugar(2Tbsp)
5g powdered gelatin 1tsp+1/2tsp
65 g water 1/4 cup +1 tsp
