用料  

ginger (necessary)
scallion (optional)

honey braised yellow croaker的做法  

  1. clean up the croaker
    1. remove scales
    2. gut the fish and pull out everything in the belly
    3. pull out everything under the gill
    4. cut off all fins

  2. slice the croakers with the knife at an oblique angle, 1 inch apart

  3. prep:
    cut scallion into chunks
    clean ginger, slice after wiping the pan with it

  4. 1. heat up pan till hot
    2. rub the pan with the ginger chunk to avoid the skin sticking to the pan
    3. add plentiful of oil

  5. when oil is hot, add fish to pan fry till both sides are golden brown

  6. add in ginger, scallion

    pour in shao-xing and vinegar to cut down fishiness

  7. add honey-braised soy sauce (or regular light soy sauce with sugar) and water to stew for 10 mins total

  8. optional: add tofu cubes

  9. before serving, add salt to taste
